We love to stay in airbnbs for working “vacations”. These trips help us see new places over a longer period of time, we get to go on hikes during the less busy times of the mid-week, and we can still cook our own meals and work from our Airbnb home base.

Even when we are taking scheduled vacation time, we still enjoy the comfort of staying at an Airbnb. They give us a full kitchen, and separate bedrooms for when the baby is asleep. As vegans as well, eating out every meal can get very expensive and not every location has a ton of vegan options.

Usually we break up the trip to a few meals out and most of our meals eating at the airbnb. In some places, we do more eating out, if there are lots of restaurants we get excited about! Other times, we rely more on meals cooked at the Airbnb.

Here are our favorite meals to cook with a limited kitchen.

1. Burgers and potato wedges

Our most recent Airbnb had a grill, so we got to enjoy these on the grill! Here’s what you’ll need:

-Burger patties (Beyond burgers hold together the best, if you’re able to grill!)

-Buns

-Lettuce

-Tomato

-Red Onion

-Avocado

-Mustard

-Potatoes

2. Tempeh Tacos

We enjoy having tacos and burgers on the same menu for the week, because a lot of the toppings work for both!

-Tortillas

-Tempeh

-Taco Seasoning Packets

-Using the tomato, red onion, and avocado as toppings for tacos in addition to burgers.

-Bonus: Chips and Salsa or Guacamole!

3. Vegetable Stir Fry

Always easy to whip together with a limited kitchen. Here’s what you’ll need.

-Pre-cut stir-fry veggies or frozen stir-fry veggies

-Rice or Quinoa

-Teriyaki Stir Fry Sauce OR Peanut Butter Sauce (our recipe includes peanut butter, soy sauce, and hot sauce with hot water to thin)

4. Chili Mac

Another easy one to prepare on a limited kitchen, but always tastes great!

-Hillary’s veggie burgers (cut up and added) OR Soy ground mixture

-Kidney beans

-Green Pepper

-Onion

-Chili seasoning Mix

-Tomato Sauce

-Macaroni noodles

5. Indian or Thai Curry

Depending on what sounds good, this is another great option for cooking in an Airbnb!

-Frozen Vegetables

-Chickpeas

-Curry Sauce

-Rice or Quinoa
